Celiac Disease

Celiac disease is an auto-immune disorder triggered by ingestion of gluten. Gluten is a protein that is found in wheat, barley and rye.  For people with celiac disease, gluten causes damage to the microscopic tissue lining the small intestine.  This damage can impair the absorption of some nutrients. Symptoms of celiac disease include diarrhea, weight-loss, bloating, fatigue and other serious complications.
